My mother grew up in Texas. I am so glad that she did because of the way that she grew up eating chili. It made this meal growing up a "treat" because I got to have Fritos with my dinner! I can't eat chili any other way. The salty chip is the perfect bed for spicy chili, gooey cheese and cool sour cream!
You know how I love to take leftovers and transform them into new meals! We are going to get 3 recipes out of this Spicy Cowboy Chili so you better double the recipe! Cook once and have 3 easy meals!
Spicy Cowboy Chili
Ingredients:
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
14.5 oz. can fire roasted diced tomatoes
15.5 oz. can kidney beans ( do not drain or rinse)
1 to 1 1/2 tsp of salt
3/4 tsp pepper
1 tbsp chili powder
1 tsp smoked paprika
1 tsp cumin
1/4 to 1/2 tsp cayenne pepper, depending on how spicy you like your chili. We love heat!
Fritos
Cheddar cheese, shredded
Sour cream
Optional: diced green onions and cilantro
In a skillet, brown the beef with the onion over medium high heat.
Drain the fat and add the garlic. Cook for one minute.
Add the full can on beans and the fire roasted tomatoes and stir.
Add all of the seasonings and spices. Stir to combine.
Simmer on low until you are ready to eat. Or put it in a slow cooker to eat later in the day. This is my preference. Especially when my boys have busy sports schedules.
Take a bowl and put a nice layer of Fritos in it.
Top your bed of Fritos with chili. Add cheese, sour cream, green onions and cilantro.
The sour cream helps balance the delicious spicy chili! And the cilantro and fresh chopped green onion add a fresh taste! My boys love this chili!!
Yum!! I need to find more excuses...I mean recipes to have corn chips for dinner!
