Autumn Harvest Salad with Chicken

I love this salad so much! In fact I am totally craving it and am making it so much lately! It is perfect for this time of the year - when the days are still a little warm. It has all of the fresh, in-season flavors that I am craving! And it is such a healthy meal! This salad is a great way to use up leftover chicken. Or just pick up a rotisserie chicken and make this salad even easier! You will absolutely love the combination of flavors and textures! This is a most perfect salad for the fall season!


Autumn Harvest Salad with Chicken

Ingredients:

Leftover chicken (or the meat from a rotisserie chicken), diced

Arugula

Baby Spinach

Blue cheese, crumbled

Apple, diced

Pepitas

Homemade Balsamic Vinaigrette(please find recipe below)


  1. Combine equal parts of arugula and spinach into a salad bowl.

  2. Add the rest of the ingredients to the bowl.

  3. Add the desired amount your homemade balsamic vinaigrette to the salad and toss well. Trust me, it is so worth it to make this simple balsamic vinaigrette. It absolutely makes this salad! Enjoy!
