Blueberry and Strawberry Bundt Cake - perfect for the 4th of July!

With the 4th of July coming up, I am going to be sharing some of my favorite holiday foods with you. And it wouldn't be the 4th of July without this cake! I am the biggest fan of a classic bundt cake and I love this cake recipe so much!


It's an easy and delicious cake to make for your 4th of July. The red, white and blue colors are perfect for this patriotic holiday. And this cake is super versatile - it is great as a breakfast cake or as a dessert! (And stay tuned to see how I transform this cake into another show stopping dessert!)


Blueberry and Strawberry Bundt Cake

Ingredients:

1 stick of butter, softened

2 cups sugar

3 eggs

1 1/2 cups milk

1 tsp vanilla

3 cups flour

1/4 tsp salt

2 1/2 tsp baking powder

1 cup blueberries

1 cup strawberries, diced


  1. Preheat oven to 350 degrees.

  2. Sift together your flour, salt and baking powder in a bowl. If you don't have a sifter, just give a good stir with a fork.

  3. In a mixing bowl, cream the butter, sugar and eggs together.

  4. Add the vanilla and milk and mix some more.

  5. Slowly add the bowl of dry ingredients to the mixer. Careful not to over beat.

  6. Add the berries to the bowl and fold them in lightly.

  7. Spray a Bundt pan with cooking spray.

  8. Pour the cake batter into the Bundt pan.

  9. Bake for 55 minutes or until a toothpick comes out clean when inserted.

  10. Let the pan rest for 20 minutes and then carefully flip onto a platter.


This cake is always delicious when topped with whipped cream and fresh berries too!

I love the sweet strawberries and blueberries in this cake! I hope that everyone has a happy Independence Day next week!
