Hooray! It's Friday night and it is the start of a long Memorial Day weekend! I love this time of the year and can't wait for it to "officially" be summertime!
For tonight's "Friday Night Cocktail" I am sharing one of my favorite summertime drinks - a Blueberry Beer Cocktail! It is amazing how the homemade blueberry simple syrup totally transforms the taste of beer into the most delicious and refreshing cocktail. Even if you are not usually a beer drinker, you will love this one!

Blueberry Beer Cocktail
Ingredients:
3/4 cup sugar
3/4 cup water 3/4 cup blueberries
1 light beer or lager
1/2 of a lime, quartered
Ice cubes
In a saucepan add the sugar, water and 1/2 cup of the blueberries to make a blueberry simple syrup.
Cook until the blueberries pop open and the sugar fully dissolves.
Strain the blueberry simple syrup through a sieve and into a jar.
Put it in the refrigerator so that it is nice and cool for you when it is cocktail time! You can store this in the fridge for up to a month.
When you are ready for a cocktail, take a tall glass and squeeze the lime into it.
Fill the glass with ice and add 1 oz. of the blueberry simple syrup.
Slowly pour the beer in until the glass is full and garnish with fresh blueberries. Frozen blueberries help to keep this super cold!
