Recipes that get passed down from generation to generation are always the best ones! This Broccoli and Cheddar Casserole is one of them. It is from my family's handwritten cookbook and it is a favorite.
I love how easy it is to make and I love how versatile it is. You can serve it for breakfast, brunch, lunch or even as a side dish for dinner. Plus you can easily double this recipe in a large casserole dish and cut it into squares if you are entertaining or are feeding a large crew. This delicious family recipe will be sure to become your family's favorite too!
Broccoli and Cheddar Casserole
4 cups broccoli florets, chopped
1/2 cup onion, finely diced
5 tbsp butter
6 eggs, beaten
1 cup whipping cream or milk
1 tsp kosher salt
1/2 tsp pepper
1/2 tsp garlic powder
1 cup cheddar cheese, shredded
Preheat oven to 350 degrees.
Melt the butter in a skillet.
Add the broccoli, onion, salt and pepper and cook until it slightly softens. Allow to cool.
In a bowl, beat together the eggs, cream, and garlic powder.
Add the broccoli mixture to the egg mixture and stir.
Spray a pie dish with cooking spray.
Pour the broccoli and egg mixture into the pie dish.
Top with the cheese and bake at 350 for 40-45 minutes. Until bubbly and golden.
Look at that delicious gooey cheddar cheese with the broccoli! Honestly - those two flavors are the best match ever! One of my favorites!
