Happy Cinco de Mayo!
My family absolutely loves the Crock Pot Fiesta Chicken recipe that I posted yesterday. Their favorite way to eat them is in a crispy burrito with cheese. And then smothered in a warm queso. Can you blame them? What could be better than that? Here's how I make them...
Cheesy and Crispy Burrito Recipe using Slow Cooker Fiesta Chicken
Ingredients:
Slow Cooker Fiesta Chicken (please scroll all the way down to the bottom for this recipe)
Flour tortillas
Cheddar cheese, shredded
Butter
Queso, warmed up
Optional garnish: Cilantro
Place a flour tortilla on a plate.
Put a layer of shredded cheese in the center of the tortilla.
Add a big layer of the Slow Cooker Fiesta Chicken on top of the cheese.
Top the Fiesta Chicken with some more cheddar cheese.
Fold the tortilla in on two sides.
Roll up the tortilla so that a burrito is formed.
Melt butter in a skillet, over medium high heat.
Place the burrito into the skillet and cook for a few minutes until that side is nice and golden.
Flip the burrito and cook for a few minutes on the other side, until it is golden. Add more butter, if needed.
Once both sides are nice and golden, remove the burrito and place onto your plate.
Top the burrito with warm queso and garnish with cilantro, if you would like.
My boys love when we have these cheesy and crispy chicken burritos for dinner! And I love how easy they are to make. It is a winner for all!!
Crock Pot Fiesta Chicken Recipe
Ingredients:
2 or 3 boneless chicken breasts (about 1.5 lbs.)
1 (16 oz.) jar of salsa
1 (10 oz.) can of diced tomatoes with green chilies
1 (15 oz.) can of corn (or 2 cups of frozen corn)
1 (15 oz.) can of black beans, drained and rinsed
1/2 tsp. kosher salt
1/2 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. paprika
3/4 cup water
Place the salsa, diced tomatoes, black beans and water into your slow cooker and stir to combine.
Add all of the spices and stir.
Place the chicken breasts into your slow cooker and spoon the sauce over the top.
Cover with the lid and cook on low for 8 hours.
Take the chicken out of your slow cooker and place on a plate. Shred the chicken by using two forks.
Add the shredded chicken back into the slow cooker and stir until it is mixed well with all of the other ingredients.
