Cheesy Cauliflower Slow Cooker Soup

Brrrr! It was a rainy day and for the first time, there was a big chill to the air. I am still thawing out from the lacrosse game. It is definitely a perfect night for soup!


I took a head of cauliflower, pulled out my slow cooker and made a delicious Cheesy Cauliflower Soup that all of my boys loved! This is such a smooth and cheesy soup. Especially when you add some more cheese, oyster crackers and chives on top. Isn't everything better with more cheese?! It hit the spot and warmed us up!


Cheesy Cauliflower Slow Cooker Soup

Ingredients:

1 head of cauliflower, chopped

I cup carrots, diced (baby carrots work great)

1 onion, diced

1 cup celery, diced (about 3 stalks)

1 tsp garlic powder

Few springs of fresh thyme

6 cups chicken stock

8 oz. cheddar cheese, shredded (2 cups)

4 oz. cream cheese, diced

1/4 cup Parmesan cheese

Kosher salt and pepper to taste


Toppings: shredded cheddar cheese, oyster crackers and chopped chives.


  1. Add the cauliflower, onion, carrots and celery to the slow cooker.

  2. Sprinkle the garlic powder over top and add pepper.

  3. Add the thyme sprigs.

  4. Pour in your chicken stock. You want just enough to cover the vegetables.

  5. Cover and cook on low for 7 to 8 hours.

  6. When cooking time is done, take off the lid and remove the thyme stems from the pot.

  7. Take an immersion blender and puree the vegetables into a smooth soup.

  8. Right before serving, add the cream cheese and Parmesan cheese and stir until the cheese has melted and the soup is nice and smooth.

  9. Add the cheddar cheese and stir until it is melted and serve.


If desired, top with some more shredded cheddar cheese because afterall this IS called Cheesy Caulifower Soup! Garnish with oyster crackers and fresh chopped chives.













I love to make soup in the slow cooker! Not only does it warm me up on a cold day but it is perfect for busy, sports filled nights like this! Now I can just keep my slow cooker on the warm setting and my boys can eat before practice, after practice or both!
