Cheesy Chicken Casserole with Green Beans

I love a good old fashioned chicken casserole dinner! What could be better than everything you need mixed into one delicious, hot and bubbling casserole? This chicken casserole has it all! I love how the chicken mixes together with the green beans in a yummy cheesy cream sauce. And the crunchy topping just takes it over the top for an incredible comfort food dinner!


This casserole is delicious served over rice or noodles. If you are looking for a quick and easy dinner that you can just throw together, then this is the one for you! You can even just pick up a rotisserie chicken from the market to make it even easier. This recipe is a family favorite that you are sure to love too!


Cheesy Chicken Casserole with Green Beans

Casserole Ingredients:

2 (10.5 oz.) cans of cream of mushroom soup

1/4 cup white wine

3/4 cup mayonnaise

1/4 tsp garlic powder

1 (4 oz.) jar diced pimentos, drained

4 cups of cooked chicken, diced (leftovers or store bought rotisserie chickens are great for this)

2 1/2 cups frozen green beans

1 (8 oz.) can of sliced water chestnuts, diced finely

3 green onions, diced

1 1/2 cups cheddar cheese, shredded

Pinch of kosher salt

Pepper to taste


Topping Ingredients:

2 tbsp butter, melted

1 cup of dry stuffing mix


  1. In a large bowl, mix together the cream of mushroom soup, white wine, mayonnaise and garlic powder. Stir until it is combined well.

  2. Add the chicken, green beans, pimentos, water chestnuts, green onions and cheddar cheese to the bowl and stir until it is combined well.

  3. Season with salt and pepper and stir.

  4. Spray a large casserole dish with cooking spray.

  5. Pour the casserole mixture into the dish and spread into a single layer.

  6. Stir together the dried stuffing mix and melted butter in a small bowl.

  7. Sprinkle this mixture over top of the casserole.

  8. Bake at 350 degrees for about 40 to 45 minutes, until the casserole is bubbling and nice and golden.


This easy casserole is delicious served over rice, quinoa, egg noodles or pasta.
