Cheesy Potato Casserole

Honestly...who does not love cheese and potatoes together?! It is the ultimate comfort food combination! This casserole is always a hit! It is a perfect side dish for your Easter dinner. But we love it so much that we eat it all year long!


I love that it takes just minutes to prepare. And you can prepare it the day before serving - which makes it a perfect holiday or party recipe. It is such an easy dish that everyone always loves. Trust me...you will too!


Cheesy Potato Casserole

Ingredients:

Cooking spray

30 oz. bag of frozen hash browns, defrosted

1 (10.5 oz.) can of cream of mushroom soup (cream of chicken or cream of celery soup are great too!)

2 cups of light (or fat free) sour cream

8 oz. cheddar cheese, shredded

1 tsp kosher salt

3/4 tsp pepper

1 tsp garlic powder

4 green onions, diced

3 tbsp butter, melted

2 cups of Corn Flakes, crushed finely


  1. Spray a 9x13” dish with cooking spray.

  2. In a large bowl combine the sour cream, cream of mushroom soup, salt, pepper and garlic powder until it is combined well.

  3. Add the green onions and stir.

  4. Add the cheddar cheese and stir.

  5. Add the hash browns and stir well.

  6. Spread evenly into the greased dish.

  7. Melt the butter in a small bowl, add crushed cereal and stir until all of them cereal is coated in butter.

  8. Sprinkle this cereal mixture over top of the casserole.

  9. Bake at 350 degrees for 40-50 minutes, until golden and bubbly.

Note:

This casserole freezes great, even after cooking. And you could even add leftover diced ham to this and serve it with a salad for an easy dinner with leftover ham.
