Those who have been following my recipes might recognize this one. It wouldn't be Thanksgiving without it! I love this casserole so much and make it every year.
Are you looking for a recipe to use up your leftover turkey from Thanksgiving? Then this is a perfect recipe for you!
This is one of the first recipes that I mastered in my 20's because I love it so much. We love to serve this over rice so I make it extra cheesy and creamy. Because everything is better with more cheese, right?! With turkey, broccoli and cheese - this is a total comfort food casserole! And it is so fast and easy to make! Plus it freezes great too!
Cheesy Turkey Divan Casserole
Ingredients:
4 cups broccoli florets, chopped
4 cups turkey, diced
1 clove garlic, minced
2 (10 3/4 oz.) cans of cream of mushroom soup
3/4 cup mayonnaise
3/4 cup light sour cream
1 1/2 to 2 cups sharp cheddar cheese, shredded (I use 2 cups)
Juice of 1/2 of a lemon
1/2 to 1 tsp curry powder
1/2 cup dry white wine
Kosher salt and cracked pepper to taste
1/2 cup parmesan cheese
1/2 cup breadcrumbs
2 tbsp butter, melted
Place the turkey and broccoli in a bowl and toss to combine.
In another bowl mix together the mushroom soup, mayonnaise, sour cream, lemon juice, wine and curry powder. Stir until it is combined. Curry powder has a strong flavor. We love it and use a full teaspoon. But this is still delicious using less of it.
Pour this mixture over the turkey and broccoli and stir until combined.
Add the garlic and stir.
Add the cheddar cheese to the bowl and season with salt and pepper to taste. Stir until it is all combined.
Spray a casserole dish with cooking spray.
Pour the turkey divan mixture into the casserole dish and spread it out.
Mix together the Parmesan cheese, breadcrumbs and melted butter in a small bowl for the topping.
Sprinkle this topping over the casserole. It makes a gorgeous golden topping!
Bake at 350 degrees for 40 to 45 minutes, until it is bubbly and golden.
Serve over white rice or noodles.
