I went to my local farm stand today to find some inspiration for tonight's dinner. I found the most gorgeous yellow pepper, jalapeños and red onion and decided to make Chicken Fajitas for "Taco Tuesday". My family was so excited! We love Mexican food so much! I love how fresh and healthy this meal is! And how fast it cooks! Who doesn't love a quick one pot meal? These sizzling Chicken Fajitas were a hit!
Chicken Fajitas
Ingredients:
Flour tortillas
3 to 4 chicken breasts, sliced thinly (about 2 lbs)
1 pepper, sliced into strips
1 onion, sliced into strips
4 tbsp olive oil
1 to 1 1/2 tsp kosher salt
3/4 tsp pepper
3/4 tsp garlic powder
1 1/2 tsp cumin
1 tsp paprika
1 tsp chili powder
Juice of 1 lime
Heat 2 tbsp of olive oil in a skillet over medium-high heat.
Add the sliced peppers and onions. Stir until until they have softened and the onions turn translucent.
Transfer the cooked peppers and onions to a plate.
Add 2 tbsp of olive oil to the skillet.
Add the chicken to the skillet and stir frequently.
Add the salt, pepper, garlic powder, cumin, paprika and chili powder and stir well. So that all of the chicken is seasoned well.
When the chicken is cooked, toss the cooked peppers and onions back into the skillet and stir.
Finish by squeezing a lime over the fajita mixture.
Serve with your favorite fajita toppings. We love shredded cheese, guacamole, lettuce, tomatoes, sour cream and jalapeños on them!

My boys loved this quick and healthy dinner! And the fact that I finally got "Taco Tuesday" on the right night!! I think that they wished that every night was "Taco Tuesday!
