Cinnamon Apple Breakfast Casserole

I love that it is apple season!! And I love breakfast casseroles! Breakfast casseroles are so easy and inexpensive to throw together. Now that my boys are in "virtual" learning from home, they are eating around the clock. I have been making a lot of breakfast casseroles because they are perfect for a quick breakfast, lunch or even a snack. This Cinnamon Apple Breakfast Casserole made our house smell incredible as it was baking! The smell of cinnamon and apples just makes me think of the fall season!


Cinnamon Apple Breakfast Casserole

Ingredients:

6 cups bread, cubed (about 16 slices)

2 apples, skins taken off and finely diced

6 eggs, beaten

1 cup whole milk

1 tsp vanilla

3/4 cup brown sugar

1 tsp cinnamon


  1. Preheat oven to 350 degrees.

  2. Mix together the brown sugar and cinnamon in a bowl.

  3. In another bowl, whisk together the eggs, milk and vanilla.

  4. Spray a 9"x13" casserole dish with cooking spray.

  5. Add half of your bread and apples to the dish.

  6. Take half of your brown sugar and cinnamon mixture and sprinkle evenly over the bread and apples.

  7. Repeat with the other half of the bread, apples and brown sugar and cinnamon mixture

  8. Ladle the egg mixture over the bread trying to cover it all.

  9. Bake, uncovered, for 40-45 minutes. Until it is puffed and golden. Serve warm.

It is sweet enough, as is but it is also delicious with a little maple syrup drizzled over the top!










This is such a perfect breakfast casserole for the fall! Who doesn't love apples and cinnamon? A match made in heaven!
