Cinnamon Stuffed French Toast

August 1, 2020

I love going out to breakfast! It is the biggest treat! But now that my growing teenage boys are off of the kiddie menu, it is just too expensive for us all to go out for breakfast. Especially because it honestly is the cheapest meal ever to make at home.

Every weekend I try to come up with a special breakfast treat for my boys. Growing up in Pittsburgh, there was this great spot for breakfast and lunch. I would always order their stuffed french toast. It was amazing! And something that my mother never made at home so it was such a treat! That delicious breakfast has been on my mind lately so I had to recreate that Cinnamon Stuffed French Toast for my family. Here is my recipe...

Cinnamon Stuffed French Toast

Six Servings

Filling Ingredients:

4 oz. cream cheese, softened

1/8 tsp cinnamon

1/4 cup powdered sugar

1 tbsp milk

Cinnamon Toast Ingredients:

1 loaf cinnamon swirl bread

5 eggs

1 tsp vanilla extract

1/2 cup milk

Butter

Cinnamon

  1. In a mixer, combine all of the filling ingredients. Mixed until smooth and set aside.

  2. Whisk together the eggs, vanilla and milk in a shallow pie dish.

  3. Take a slice of bread and dip both sides in the egg mixture and sprinkle each side with cinnamon.

  4. Melt butter in a skillet and cook the egg and cinnamon coated bread for a few minutes on each side, until nice and golden. Repeat until the loaf is finished and all of the pieces are now french toast.

  5. Place 6 pieces of french toast onto a sheet pan.

  6. Spread a nice thick layer of the filling onto the 6 pieces french toast.

  7. Top each one with another piece of french toast.

  8. Bake at 350 degrees for about 5 minutes, until the filling is warm.

  9. Serve with powdered sugar or maple syrup.

This Cinnamon Stuffed French Toast hit the spot and brought me back to my childhood treat!
