I love Sweetgreen! For those not familiar with this place, it is a healthy chain that specializes in nutritious and seasonal salads. There used to be a Sweetgreen right next to where I used to work and I became addicted to one of their salads - their Chicken Pesto Parm salad was my absolute favorite and I never got sick of it!
Since I am no longer working there, my boys are missing this salad big time and requested for me to make it for tonight's dinner. I love that they love this salad as much as I do! It is the most perfect combination of flavors...spinach, shaved parmasan cheese, grape tomatoes, roasted chicken, spicy roasted broccoli, and quinoa with a pesto vinaigrette and hot sauce! Perfection! And it may sound weird but I would microwave this salad for two minutes when I got home from work so that I could have a warm and nutritious dinner. The cheese gets gooey, the spinach and tomatoes wilt and all of the flavors come together. It is the best meal ever! It is great both cold or warm and I thank you, Sweetgreen, for the inspiration for this recipe!
