One of the best parts about St. Patrick's Day is when the corned beef goes on sale! I always load up my freezer with it so that we can enjoy it all year long.
I love Reuben Sandwiches but this Corned Beef Rachel Sandwich is my husband's favorite. This one is perfect for those who do not like sauerkraut. The coleslaw is perfect with corned beef. It is equally delicious and it can be eaten cold or you could grill it in butter like a Reuben, if you would like. The combination of flavors is fantastic in this classic sandwich!
Corned Beef Rachel Sandwich
Ingredients:
Corned Beef, sliced thin (from the deli counter or homemade)
2 Slices of Rye Bread
Thousand Island Dressing
Swiss Cheese
Coleslaw
Spread Thousand Island Dressing onto both pieces of bread.
Layer your corned beef onto one slice of bread.
Place swiss cheese on top of the corned beef.
Top the swiss cheese with a generous layer of coleslaw.
Place the other piece of bread on top, slice the sandwich in half and enjoy!
I just love this classic sandwich! The crunch of the coleslaw is so perfect on it! It might be time to cook up some more corned beef so we can enjoy more of these delicious sandwiches this week!
