Creamy Tomato and Spinach Bow Tie Pasta with Chicken

Are you looking for a super easy pasta dish for dinner? Then this recipe is the one for you! The delicious, creamy tomato sauce comes together quickly, as the pasta boils. It couldn't be easier! My family absolutely loves this pasta dish! It is the ultimate comfort food dinner and it is perfect for your Sunday supper!


Creamy Tomato and Spinach Bow Tie Pasta with Chicken

Ingredients:

2 Chicken breasts, diced into 1" pieces

Italian dressing

1/2 onion, diced

2 cloves garlic, minced

2 (14.5 oz) cans diced tomatoes

1 tbsp sugar (optional)

1/2 tsp basil

1/2 tsp oregano

Kosher salt and pepper to taste

6 oz light cream cheese

1/2 bag of fresh spinach, chopped

12 oz box Farfalle, cooked

Fresh parm and basil to garnish (optional)


  1. Boil water and cook the pasta Al dente, according to directions. Drain and set the pasta aside.

  2. Marinate chicken in the Italian dressing for at least 30 minutes.

  3. Pour the chicken into a large skillet on the stove top and cook on medium high until chicken is cooked through.

  4. Remove the cooked chicken and set aside.

  5. In that same skillet, lower heat to medium and add the onions. Cook until translucent, scraping up the chicken bits for extra flavor. Add more olive oil if needed.

  6. Add the minced garlic and cook for 1 minute.

  7. Add the cans of tomatoes, sugar, basil, oregano, salt and pepper and stir until combined. The sugar is optional but it does help to cut the acidity from the tomatoes.

  8. Add the diced cream cheese and stir until it is melted and sauce is super creamy and smooth.

  9. Add spinach and cook until it is just wilted.

  10. Toss in the chicken and cooked pasta and stir until it is combined.

  11. Plate the pasta and top with some fresh basil and Parmesan cheese.

Cook the marinated chicken in a skillet, until it is cooked through...

Set the cooked chicken aside...

In that same skillet, cook the onions and garlic...

Add the diced tomatoes, basil, oregano, sugar, salt and pepper and stir...

Add the diced cream cheese...

Stir until the sauce is creamy and smooth...

Add the spinach to the sauce and stir...


Then add the cooked chicken and pasta to the sauce and stir...

Look at this creamy and delicious pasta?! Wasn't it so fast and easy to make?! Who wouldn't want to have this for dinner? It is one of our favorites! So yummy!
