Crock Pot Broccoli and Cheddar Soup

I love soup and I love ALL foods with broccoli and cheese! They are a match made in heaven! This cheesy broccoli cheddar soup is delicious!


And the best part is that it cooks in your slow cooker - making dinner time a breeze. I love to make it in the beginning of the week so that have an easy lunch too.


If you are a broccoli and cheese fan too, you will love this soup!


Crock Pot Broccoli and Cheddar Soup

Ingredients:

8 cups broccoli, chopped (about 2 to 3 heads)

1 cup carrots, diced

1 cup celery, diced

1 cup onion, diced

about 5 sprigs of thyme

1 tsp garlic powder

6 cups chicken stock

Salt and pepper to taste

8 oz. cheddar cheese, shredded (2 cups)

4 oz. Velveeta cheese, diced (can also use cream cheese instead)


  1. Add the broccoli, carrots, celery, onion and thyme sprigs to your slow cooker.

  2. Pour in the chicken stock. You want just enough stock to cover the vegetables.

  3. Season with garlic powder and pepper to taste and stir.

  4. Cover and cook on low for 7 to 8 hours.

  5. When the cooking time is done, take off the lid and remove the thyme stems from the pot.

  6. Take an immersion blender and puree the vegetables into a smooth soup.

  7. Right before serving, add the velveeta cheese and stir until the cheese has melted and the soup is nice and smooth.

  8. Add the cheddar cheese and stir until it is melted.

  9. Taste to see if you need to add any salt. Serve hot. I like even more cheddar cheese sprinkled on the top of mine.


Please note that you can also make this on the stovetop too. Just cook the vegetables in the chicken stock until they soften and become fork tender. Then proceed with step five.

Crock pot soups make it so easy! And I love the way that our house smells as this soup simmers all day. Broccoli and cheddar cheese are a perfect match!
