Crock Pot Fiesta Chicken...perfect for tacos, burritos, quesadillas or bowls!

Tomorrow is Cinco de Mayo! And this easy crock pot meal is the perfect recipe for it! Especially of you will be having a busy day like I am.


If you love Mexican food, you will love this super easy Crock Pot Fiesta Chicken recipe! Just put all of the simple ingredients into your crock pot in the morning, let it cook all day and then you will have an easy and healthy dinner.


This Fiesta Chicken is the perfect filling for tacos, burritos or quesadillas. It is also delicious on top of a salad or in a protein bowl. There is nothing better than an easy and healthy crock pot meal!


Crock Pot Fiesta Chicken

Ingredients:

2 or 3 boneless chicken breasts (about 1.5 lbs.)

1 (16 oz.) jar of salsa

1 (10 oz.) can of diced tomatoes with green chilies

1 (15 oz.) can of corn (or 2 cups of frozen corn)

1 (15 oz.) can of black beans, drained and rinsed

1/2 tsp. kosher salt

1/2 tsp. garlic powder

1/2 tsp. oregano

1/2 tsp. chili powder

1 tsp. ground cumin

1/2 tsp. paprika

3/4 cup water


  1. Place the salsa, diced tomatoes, black beans and water into your slow cooker and stir to combine.

  2. Add all of the spices and stir.

  3. Place the chicken breasts into your slow cooker and spoon the sauce over the top.

  4. Cover with the lid and cook on low for 8 hours.

  5. Take the chicken out of your slow cooker and place on a plate. Shred the chicken by using two forks.

  6. Add the shredded chicken back into the slow cooker and stir until it is mixed well with all of the other ingredients.


This is such a versatile recipe that is delicious no matter how you serve it! My boys love it in a burrito with queso on top and I love it in tacos or on a salad!
