It's a chilly and rainy fall day here and I am craving my first pot of soup of the season. And it is also "Crocktober" and it is time to break out my crock pot again!
This Crock Pot Potato and Corn Chowder is the perfect recipe for a rainy Sunday like this. It is so easy, inexpensive and is always a favorite! A perfect comfort food meal that my family loves! And yours will too!
Crock Pot Potato and Corn Chowder
Ingredients:
3 pieces of cooked bacon, crumbled
1/2 onion, diced
1 carrot, finely diced
1 celery stalk, finely diced
4 Yukon gold potatoes, diced into small squares
1 1/2 cups frozen or canned corn
4 cups of chicken stock
Kosher salt and pepper to taste
1/4 tsp garlic powder
3/4 cup half and half
Shredded cheddar and chives to garnish
Put the potatoes, corn, celery, carrots, onion and bacon into your slow cooker.
Pour the chicken stock over top, so that it fully covers the veggies.
Add garlic powder and pepper. I wait and add salt at the end.
Cook on high for 4 hours or on low for 6-8 hours.
Right before serving, taste to see if it needs more salt. Then add the half and half to the slow cooker and serve once it is heated up.
Garnish with shredded cheddar cheese and chives.
This hearty and delicious chowder is perfect to warm you up on a cold and rainy day!! We absolutely love it! And I love how easy it is to make!
