Crock pots aren't just for cold weather meals! I use mine a lot during busy summer days when we are all on different schedules. Last night was one of those nights. My oldest was lifeguarding and my other son had football far away and wouldn't be home until late.
So, I got out my crock pot to make an easy taco dinner that everyone could eat when they wanted to. I just loaded up the crock pot with taco meat and prepared all of the toppings to keep in the fridge. It was perfect for a busy night like that! And all of my boys were so thrilled to come home to a house smelling of tacos - one of their favorite dinners! They couldn't wait to dig right in!
Crock Pot Tacos
Ingredients:
1 lb. ground beef
1/2 onion, diced
1/3 cup water
1/2 tsp salt
1/4 tsp garlic salt
1/2 tsp oregano
1/2 tsp chili powder
1 tsp cumin
1 tsp paprika
A few dashes of red pepper flakes (optional)
Cook the ground beef and onions in a skillet until fully browned.
Drain off any extra fat from the skillet.
Add spices and water and cook until the water fully cooks in.
Transfer the cooked taco meat to your crock pot and place the setting to warm. Now the taco meat will stay warm until you are ready for dinner.
Prepare your favorite taco fixings and store in the refrigerator until dinner.
For my growing family of 5, I usually double this recipe because they are always so hungry after sports and a busy day.
My boys absolutely love taco night! And I love how quick and easy this dinner is to make. And that everyone can eat their tacos when they are free to. This recipe is perfect for busy days and nights!
