I know that I have been joking a lot about the insane prices of eggs lately. I truly never thought that it could ever get this high. So now I am really focusing on how I can stetch out my eggs and make the most of them. Making a crustless quiche is perfect for that! By adding extra healthy vegetables and milk, you get 8 servings from just 6 eggs!
This Crustless Mediterranean Quiche has the most amazing combination of flavors and it is a great way to get a huge serving of healthy vegetables and protein. Plus it takes just minutes to prepare since you do not have to precook any of the vegetables before baking.

Crustless Mediterranean Quiche
Ingredients:
1 (14 oz.) can or jar of artichoke hearts, drained and chopped
1 garlic clove, minced
1 1/2 cups of baby spinach, chopped
1/2 cup of bell peppers, diced
2 green onions, diced
1/4 cup of pitted Kalamata olives, sliced
1 (4 oz.) container of reduced fat feta cheese, divided in half
6 eggs, beaten
3/4 cup milk
1/2 tsp dried oregano
A pinch of salt
Fresh ground pepper to taste
In a bowl, toss together the artichokes, garlic, spinach, peppers, green onions and Kalamata olives.
Fold in half of the feta cheese.
Spray a pie dish with cooking spray.
Pour the vegetable and cheese mixture into the prepared pie dish and spread it out evenly.
Whisk together the eggs, milk, oregano, salt and pepper together in a bowl.
Pour the egg mixture evenly over the vegetables in the pie dish.
Top with the remaining feta cheese and some extra olive slices, if you would like.
Bake at 350 degrees for about 35 to 40 minutes, until the quiche is puffed and golden.
