On a hot summer's day there is nothing more refreshing than cucumber tea sandwiches for lunch! They are so easy and inexpensive to make and they are always so crisp and refreshing! Summertime cucumbers are the best and I love to make these cucumber tea sandwiches all summer long!
Cucumber Tea Sandwiches
Ingredients:
1/2 cup cream cheese, softened
1 tbsp mayonnaise
3/4 tsp dry salad dressing mix (Ranch or Italian)
1 tbsp fresh dill, chopped
English cucumber, sliced thin
Bread, crusts cut off
Optional: fresh pea shoots or watercress
Mix together the cream cheese, mayo, dressing mix and dill in a bowl.
Spread cream cheese mixture onto two slices of bread.
Top with a thin layer of cucumbers and pea shoots or watercress on one of the slices of bread.
Place the other piece of bread on top and cut into soldiers or triangle shapes and enjoy this crisp and refreshing taste of Summer!
Note: I never cut the crusts off of PBJs but I ALWAYS do with tea sandwiches. Of course I don't like to let anything go to waste. So just save the crusts to use for a breakfast casseroles like these...
