Cucumber Tea Sandwiches

I told you that I am hanging onto every last minute of summer! And we still have about one week left. I am still enjoying one of my summertime favorites - Cucumber Tea Sandwiches. There is nothing more refreshing than a cucumber sandwich for lunch! They are so easy and inexpensive to make and they're always so elegant, crisp and refreshing.


With the prices of meat being so high, I am finding that veggie based meals are helping to keep my grocery bills down a bit. I love that I can still get cucumbers at my local market because I am going to make these a lot more often. I just love these sandwiches!


Cucumber Tea Sandwiches

Ingredients:

8 oz. cream cheese, softened

1/4 cup mayonnaise

1 (0.7 oz.) Italian dressing seasoning mix

1 tbsp fresh dill, chopped

Cucumber, sliced thin

Bread, crusts cut off

Optional: fresh pea shoots or watercress


  1. Mix together the cream cheese, mayo, dressing mix and dill in a bowl.

  2. Spread cream cheese mixture onto two slices of bread.

  3. Top with a thin layer of cucumbers and pea shoots or watercress on one of the slices of bread.

  4. Place the other piece of bread on top and cut into soldiers or triangle shapes and enjoy this crisp and refreshing taste of summer!


You can enjoy this sandwich all year long with the amazing English and mini cucumbers that you can find in the grocery store. These are perfect to serve for a luncheon or for a shower!

Note: I never cut the crusts off of PB&J's but I ALWAYS do with tea sandwiches. Of course I don't like to let anything go to waste. So just save the crusts to use for homemade breadcrumbs or croutons. The crusts are perfect for that!
