I am loving this warm spring day! I have been out working in my yard - planting flowers, herbs and veggies. Tonight I will be running around like crazy for my boys sports so I want to have a quick and easy dinner. And one that won't heat up my house. So I am grilling one of our favorites for dinner tonight! This recipe is so fast and easy to make! And the flavors are delicious together!
Grilled Asian Sesame Chicken and Vegetables Recipe
Ingredients:
1 bottle of store bought Asian Sesame Salad Dressing
4 boneless chicken breasts
3 cups green beans or sugar snap peas, ends trimmed
3 celery stalks, cut into 1 inch pieces
2 cups of peppers, cut into 1 inch pieces
1/2 onion, cut into 1 inch pieces
2 tsp sesame seeds
Garlic salt and pepper to taste
Start by reserving 1/3 cup of the sesame dressing and set aside for the rice recipe below.
Dice up the chicken into 1 inch pieces.
Place diced chicken into a large Ziploc bag and pour half of the remaining dressing into the bag.
Sprinkle 1 tsp of sesame seeds in the bag, seal the bag and shake to make sure that all of the chicken is coated evenly with the dressing and sesame seeds.
Dice up the veggies in uniform sizes so that they will grill evenly.
Put the vegetables in a large Ziploc bag and pour in the rest of the bottle of dressing.
Sprinkle with 1 tsp of sesame seeds, seal and shake the bag to make sure that all of the veggies are coated.
Allow to marinate for at least 45 minutes.
Light up the grill and cook the veggies and chicken using either kebob sticks or a grill pan. I like to do a combo of each. Season with garlic salt and pepper as you grill.
While the grill is going, I like to cook my rice in the pressure cooker. Please find the Sesame Rice Recipe below...
Pressure Cooker Sesame Rice Recipe
Ingredients:
Cooking Spray
1 cup rice
1 tbsp butter
1 tsp kosher salt
1 1/2 cups water
1 tsp sesame seeds
1/3 cup of the reserved Asian Sesame Dressing
Spray your pressure cooker pan with cooking spray.
Add water, rice salt and butter.
Give it a quick stir and cook under pressure for 6 minutes.
When the 6 minutes are up, do a quick release and take the lid off.
Add the reserved salad dressing and sesame seeds and fluff with a fork until combined.
I absolutely love making rice in my pressure cooker! It comes out perfectly every time!!
