Easy Pressure Cooker Mashed Potatoes

My guys absolutely love their mashed potatoes! And my husband always requests them as our side dish. Little does he know what a pain it can be to peel all of the potatoes, dice them, boil them and mash them - all while trying to time the rest of the dinner perfectly.


This is why I had to figure out an easier way to make mashed potatoes and I am SO glad that I did. Making mashed potatoes in the pressure cooker is a breeze! They cook fast, I do not steam up the kitchen, the stove top is open for other foods and the mashed potatoes can stay warm in there until the rest of the dinner is complete. And the best part is that I don't even have to peel or dice these potatoes! This is a perfect side for holiday dinners too! Here's how...


Easy Pressure Cooker Mashed Potatoes

Ingredients:

1 1/2 lb. bag of mini petite medley potatoes

1 cup water

4 tbsp butter

3 to 4 tbsps milk

1/2 cup sour cream

Kosher salt and pepper to taste

Optional: chives for garnish


  1. Wash the potatoes and pierce each one with a fork a few times.

  2. Add the water to your pressure cooker.

  3. Put the rack in your pressure cooker and place the potatoes on top.

  4. Put the lid on your pressure cooker, close the valve and cook under pressure for 8 minutes.

  5. Let the pressure cooker do a natural release. When you can naturally open the lid, carefully remove the potatoes and the rack and drain out the water. The potatoes should be fork tender.

  6. Melt the butter in the pressure cooker and add the potatoes back into the pot.

  7. Add the milk, salt and pepper to to the pot and mix together with a hand mixer. Go light with the salt and pepper, you can always add more but you can not remove it.

  8. Use the hand mixer to mix together until you have your desired consistancy. My family does not like a lot of lumps.

  9. Stir in the sour cream and keep on the warm setting until you are ready to serve.

  10. Give a good stir right before serving. Add another tablespoon or so of milk, if needed.

  11. Garnish with chives if you would like. If I am serving these potatoes with gravy, I do not add chives.








Making mashed potatoes without having to peel and dice them is a total game changer! Now I do not mind making them often, with this easy recipe. Afterall, mashed potatoes go so well as a side to SO many dishes!!
