"Fall off the Bone" Slow Cooker Whole Chicken

We are in the middle of a heat wave here. It is one hot July day and I do not want to heat up my kitchen. So tonight I am cooking a whole roasting chicken in my crock pot.


Many people associate crock pots with cozy, comfort food meals in the winter. But I love to cook with it in the summer just as much! I can put this chicken in the crock pot in the morning, take the kids to the pool and come home to a house that smells amazing - and dinner is ready! Plus the kitchen stays nice and cool - which is perfect for a 95 degree day like this. This slow cooker chicken stays so juicy and tender and the meat just falls off of the bone!


"Fall off the Bone" Slow Cooker Whole Chicken

Ingredients: 6 lb. roasting chicken 1 onion, quartered

1 celery stalk, halved 1 1/2 cups chicken stock Kosher salt Fresh cracked pepper Garlic powder Paprika

  1. Remove the gizzards from the cavity of the chicken.

  2. Place the quartered onion and celery into the cavity of the chicken. This adds a delicious flavor to the chicken.

  3. Pour the chicken stock over the chicken.

  4. Season the chicken well with kosher salt, fresh cracked pepper, garlic powder and paprika. The paprika adds a great color and makes it look like it was roasted in the oven.

  5. Cook on low for 8-10 hours or on high for 4-5 hours. You will know when it is done when the drumsticks pull away from the breasts and the juices run clear.

  6. Remove the chicken from the slow cooker and place it on a platter or cutting board.

  7. Place a sheet of foil over the chicken and allow it to rest for at least 15 minutes. This helps to keep it juicy.

  8. Carve the chicken and enjoy with all of your favorite sides.

It is as easy as that! If you prefer a crispy skin, just place the chicken under the broiler for a bit after you remove it from the slow cooker. My family always removes the skin from their chicken so I serve it right from the slow cooker and it is delicious every time!
