Spring sports are in high gear! I am loving every minute of this busy season! Especially since we were not able to have a spring sports season last year. Bring on the practices and the games!
With this fun and hectic schedule, I love to have some easy dinners that I can have on the table quickly. And with very little fuss. These fish tacos are always a hit with my family! I love how few ingredients it needs and how fast it is to make. What could be better?
Fast and Easy Fish Tacos
Ingredients:
Frozen Fish Fillets
Southwest Chopped Salad Kit
Chili Powder
Flour or Corn Tortillas
Lime Wedges
Preheat the oven to 425 degrees.
Place the frozen fish fillets onto a sheet pan and sprinkle each fillet with some chili powder.
Bake the fish fillets in the oven for 12 minutes.
Take the fish fillets out of the oven, flip each piece and season other the side with a sprinkle of chili powder.
Return the fillets to the oven and continue to bake for another 10 to 12 minutes, until golden.
Take the cooked fish fillets out of the oven and slice each piece into strips.
Place the fish onto a flour tortilla. Or a corn tortilla if you prefer those.
Squeeze a wedge of lime into the fish.
Place a bit of the salad mixture on top of the fish.
Then add a drizzle of the chipotle ranch dressing from the salad kit.
Lastly, sprinkle on the cheese that came with the salad kit and enjoy!
A fast and easy dinner that the family will love! These Fish Tacos are perfect for these busy nights or for these nights when you just don't feel like cooking or you just don't have the time. So yummy!!
