Pizza night used to be an inexpensive night off from cooking. But now my 3, hungry teenage boys have turned that into an expensive night. We now have to order 3 pizzas!
So, now we make pizza at home. I always try to make one of the pizzas a unique one and the flavors of this one was a hit! The blue cheese and arugula are a perfect flavor combination with the sweet figs that carmelize in the oven. And the salt and crunch of the crispy prosciutto, with fresh arugula on top makes this flatbread pizza the best! Perfect for lunch or dinner. Or cut it into small squares for an amazing appetizer.
Fig, Prosciutto, Blue Cheese Arugula Flatbread Pizza
Ingredients:
Homemade or store bought pizza dough
Fig preserves
Blue cheese crumbles
Mozzarella cheese, shredded
Arugula
Prosciutto
Corn Meal
Roll out the dough, on a floured surface until it is nice and thin.
Sprinkle a sheet pan with a little bit of corn meal. This will keep the pizza from sticking to the pan and adds a great crunch to the pizza.
Spread on a thin layer of fig preserves all over the crust.
Add a layer of arugula.
Top with a layer of mozzarella cheese and the blue cheese crumbles.
Lastly, add a layer of prosciutto.
Bake in the oven, at 475 degrees, for about 15-17 minutes. Keep an eye on it. You want the prosciutto to be nice and crispy but not too well done.
Take the pizza out of the oven and top with more fresh arugula and enjoy.
Note: You can also make this pizza by using store bought flatbread or naan.
This pizza might be my new favorite! The flavors are truly a match made in heaven! You will love it!
