Grilled Jamaican Jerk Chicken

My family loves spicy food! When I went to Jamaica two years ago I fell in love with the unique and spicy flavor of jerk seasoning. There is one place at the beach that cooks jerk chicken perfectly! But now that my boys are off of the kiddie menu, it is expensive for us to go out to eat! So I put together this marinade and it works perfectly!! We love it! And it was the perfect thing to bring on our camping trip to cook over the fire! Super easy!


Grilled Jamaican Jerk Chicken

Ingredients:

1/4 cup olive oil

1/4 cup white wine vinegar

2 tbsp jerk seasoning

2 chicken breasts, sliced in half lengthwise


  1. Put the olive oil, white wine vinegar and jerk seasoning into a mason jar and shake well.

  2. Put the chicken breasts into a large Ziploc bag.

  3. Pour the jerk marinade over the chicken and seal the bag. Make sure that all of the chicken pieces are covered with the marinade.

  4. Let the chicken marinate for at least an hour or up to 48 hours.

  5. Fire up the grill and grill the chicken until it is done. About 3 to 5 minutes a side, depending on the thickness of the chicken.


If you like it extra spicy, just sprinkle on some more jerk seasoning when grilling.





Dinner by lantern light after a full day outside! What could be better?! I love to serve it with grilled veggies and couscous. It is also delicious as a sandwich or over a salad.
