When we go camping I like to keep things as simple as possible. I like to pack very few ingredients and my goal is to always cook as much as I can on the grill rack or fire so that we do not have pots and pans to do after dinner is done. These vegetable kebabs are perfect for this!! And grilling the marinated vegetables brings out their natural sweetness. It tastes so great after a day of hiking and couldn't be easier!
Grilled Vegetable Kebabs
Any vegetables that you have, sliced
Zesty Italian salad dressing
Garlic salt or powder
Pepper
Slice up your vegetables into the same size pieces so that they grill evenly. All vegetables work great for this recipe! I used peppers, onions and mushrooms.
Put the vegetables into a large Ziploc bag.
Pour the Italian dressing over top of the veggies.
Close the bag and shake so that all of the veggies are covered. Let it marinate for at least 45 minutes or up to 24 hours.
Put the marinated vegetables onto skewers. If using wood skewers, make sure that you soak the skewers in water first.
Season with fresh cracked pepper and garlic salt or garlic powder.
Fire up the grill. Place the kebabs on a hot grill and keep turning the vegetable kebabs until they are done.
Sometime the easiest recipes are the best! I love to serve these grilled vegetable kebabs with couscous. It is just as easy to make and is the perfect pairing!
