I have 3 teenage growing boys who can eat all day! With meat being so much more expensive these days, I am always trying to find a way to stretch out the meat. We love Mexican food and could eat it everyday. I figured out a way to double the meat with this delicious Ground Beef and Bean Tostada recipe. Adding the refried beans doubles the meat and the flavor at such a low cost. And it is perfect layer for a Tostada because it doesn't roll off. My boys loved this dinner and felt like they were having nachos for dinner! You will love it too!
Ground Beef and Bean Tostadas
Ingredients:
1 lb. ground beef
1/2 onion, diced finely
1/2 cup water
1/2 tsp kosher salt
1/4 tsp garlic powder
1/4 tsp oregano
1/2 tsp chili powder
1 tsp cumin
1 tsp paprika
1 (16 oz.) can refried beans
Tostado shells
Guacamole
Lettuce, chopped finely
Tomato, diced
Cheese, shredded
Brown the ground beef and onion over medium-high heat.
Drain the fat.
Add all of the spices to the browned ground beef and stir until combined.
Pour in the water and stir, lowering the heat to medium.
Add the can of refried beans and stir until it is mixed in well with the ground beef.
Preheat oven to 350 degrees.
Place the tostado shells onto a cookie sheet.
Spread a layer of the ground beef and bean mixture to the tostado.
Add a layer of shredded cheese and bake at 350 degrees for about 5 minutes.
Top the baked tostado as you would with your favorite taco fillings.
We love to top our tostados with guacamole, lettuce and tomato!
Combining the ground beef with the beans gives me twice the protein for half of the price! Such a great way to save money!
