Healthy Chocolate Chip Banana Muffins

Two of my three teenage boys are learning "virtually" from home. They are eating us out of house and home. We are just flying through food! Especially the snack foods.


So I had to come up with a healthy snack that they could grab at anytime. These muffins do not have any oil or fat in them. Yet they still have a perfect, spongy cake texture. And they are loaded with healthy fruit - which is a perfect way to use up any overripe bananas that you may have. I love that they can just grab these muffins whenever they get hungry. They are perfect for a quick breakfast, snack or even dessert. My boys love them! And I love giving them a healthy homemade muffin instead of a processed snack.


Healthy Chocolate Chip Banana Muffins

(Makes 24 muffins)


Ingredients:

5-6 ripe bananas

2 eggs

3/4 cup sugar

1 cup applesauce

1 tsp vanilla extract

1 tsp cinnamon

2 1/2 cups flour

1/2 tsp salt

2 tsp baking powder

1 tsp baking soda

1 cup chocolate chips


  1. Place the bananas in a mixing bowl and mix well, leaving just a few banana chunks.

  2. Add the eggs, sugar, vanilla and applesauce and mix until combined.

  3. In a separate bowl stir together the flour, salt, cinnamon, baking soda and baking powder.

  4. Add the dry ingredients to the banana mixture and stir until just combined. Do not over mix.

  5. Fold in the chocolate chips.

  6. Line a cupcake pan with cupcake liners.

  7. Fill each muffin tin 3/4 full.

  8. Bake at 350 degrees for 30 to 32 minutes, until a toothpick comes out clean.


Please note that you can also make these with whole wheat flour to make these muffins even healthier!
