Healthy Chocolate Chip Pumpkin Muffins - made with no oil or butter!

I never thought that this day would come! My two younger boys are finally back into school again part time! They have been home since March and have missed school and their friends so much! Yes, I never thought that I would say that. But they have a new appreciation for school and were so excited this morning!


So, I wanted to make them a special treat for when they got home. They love these "healthy" Chocolate Chip Pumpkin Muffins so much! And I love that this sweet treat doesn't have any added butter or oil! A healthier treat that is perfect for breakfast, after school snack or even dessert! A perfect pumpkin treat for this time of the year!


Healthy Chocolate Chip Pumpkin Muffins

(Makes 24 muffins)


Ingredients:

15 oz. can of pumpkin

2 eggs

3/4 cup sugar

1 1/2 cups of applesauce

1 tsp vanilla extract

2 tsp pumpkin spice seasoning (can substitute cinnamon)

2 cups flour

1/2 tsp kosher salt

2 tsp baking powder

1/2 tsp baking soda

1 cup of chocolate chips (or more)

Cooking spray


  1. Place the canned pumpkin, eggs, sugar, vanilla and applesauce in a large bowl and mix until combined.

  2. In a separate bowl stir together the flour, salt, pumpkin spice, baking soda and baking powder.

  3. Add the dry ingredients to the pumpkin mixture and stir until just combined. Do not over mix.

  4. Fold in the chocolate chips.

  5. Line a cupcake pan with cupcake liners and spray the insides with some cooking spray.

  6. Fill each muffin tin 3/4 full.

  7. Bake at 350 degrees for 22 to 25 minutes, until a toothpick comes out clean.


Please note that you can also make these with whole wheat flour to make these muffins even healthier!
