Today was the first day of school for two of my teenage sons. It has been a long time since we had to wake up early to an alarm clock! We are all dragging big time! So, I needed to come up with a quick and easy dinner.
Hot Kielbasa Hoagie to the rescue! This quick and inexpensive meal takes no time at all to throw together on the stovetop. And I love that I have my veggie, starch, calcium and protein all in one delicious hoagie! It is the perfect quick dinner for the first day of school!
Hot Kielbasa Hoagie with Sautéed Peppers and Onions
Ingredients:
1 (14 oz.) Smoked kielbasa, cut into roll length pieces and then into half, lengthwise
1 red pepper, sliced into strips
1 onion, sliced into strips
1 1/2 tbsp butter
Hoagie Rolls
Provolone cheese
Melt the butter in a skillet on medium-high heat.
Place the kielbasa into the skillet with the cut side down.
Add the sliced onion and pepper strips on top and around the sides of the kielbasa.
Cook until the kielbasa has browned a bit, about 4 to 5 minutes. Flip the kielbasa and continue to cook until the other side browns. The kielbasa is already cooked so you are just warming it up.
Keep on stirring the onions and peppers so that they cook evenly.
In the meantime, toast your hoagie roll and cheese under the broiler until the cheese melts.
Place the browned kielbasa and sautéed peppers and onions onto the toasted roll and enjoy hot.
How fast and easy was this meal? It is perfect for those days when you just don't have the time or energy to cook. It is delicious and you are the only one who will know how quick and easy it is!
