How to dry fresh herbs for storage and use all year long…

My herb garden had a wonderful year! Just look at all of this fresh oregano from my garden! We have a freeze warning for tonight that might kill most of my fresh herbs. I don't like anything to go to waste. So, I am going to dry my herbs so that I can enjoy the garden fresh taste of all year long!


When you think of drying herbs, you probably picture the old fashioned way of tying them into a bouquet and drying them by hanging them upside down. Well, I am going to show you an easier and faster way dry herbs! You can do this in the oven or in the air fryer and it's so easy to do. Here's how...

How to dry fresh herbs in the oven:


  1. Wash and dry your fresh herbs.

  2. Place the herbs in a single layer on a sheet pan.

  3. Dehydrate these fresh herbs in the oven by baking them at 170 degrees for about 30 to 35 minutes.


Look at how much the oregano shrinks when it is dehydrated!


How to dry fresh herbs in the air fryer:

  1. Wash and dry your fresh herbs.

  2. Place your herbs on your air fryer basket.

  3. Dehydrate the fresh herbs by baking at 165 degrees for about 40 minutes. My air fryer even has a dehydrator button.

Dehydrating your fresh herbs preserved this way packs in that fresh grown flavor so that you can enjoy it all year long!

I like to store the dried herb leaves whole, in a mason jar. Then when I use the dried herbs in my recipes over the winter, I just crumble them with the palms of my hands until I get the desired amount. I feel like doing it this way keeps the flavor even fresher longer!

As you know, I don't like anything to ever go to waste! Do you know how some recipes call for just a few tablespoons of fresh herbs that you buy from the store? Do not let the rest go to waste! Try drying them by dehydrating them in the oven to use at another time. It is so easy! And we aren't wasting anything!
