Happy St. Patrick's Day!! There is one food that I always make for St. Patty's Day and that is Irish Soda Bread! I love how easy it is to make. I love that unlike other breads, you do not have to worry about yeast or letting the dough rise. You simply just mix the dough, knead it and bake it. It is a simple as that! And it is so delicious warm, out of the oven, with a pat of butter. Yum! Wishing you a very happy St. Patrick's Day!
Irish Soda Bread
Ingredients:
3 cups flour
3 tbsp sugar
1 tsp kosher salt
1 tsp baking soda
3 tbsp butter, room temperature and diced into 1/2" squares
1 1/4 cup buttermilk
1 egg, beaten
1 tsp orange zest
Optional: 1/2 to 3/4 cup of raisins
1 tbsp flour for dusting
Mix together the flour, baking soda, salt and sugar in a bowl.
Make a well in the middle of the bowl and add the buttermilk, egg and butter.
Stir from the outside in. When it is almost completely mixed, add the orange zest and raisins, if desired.
Continue to stir until a soft dough forms.
Flour your hands and form the dough into a ball.
Transfer the ball of dough to a floured surface and knead the dough for about 3 minutes.
Shape the dough into large round ball and place onto a sheet pan lined with parchment paper.
Dust the top of the dough with flour and cut an "X" on the top of the dough.
Bake at 400 degrees for 40 to 50 minutes, until it is golden brown and a toothpick comes out clean when you insert it.
