I always saw this cocktail on the menu at my local Mexican restaurant but I was hesitant to try it. Mostly because traditional margaritas "on the rocks" is one of my very favorite drinks! And I wasn't sure if I would like a spicy margarita.
A few weeks ago, we were at that same restaurant with friends and she ordered a pitcher of Jalapeño Cucumber Margaritas. It was love at first sip! I can't believe that it took me this long to try it! I had to figure out how to make them at home! The spicy jalapeños and the cool cucumbers mellow together perfectly in the lime tequila! A perfect cocktail to kick off the weekend!
Jalapeño Cucumber Margaritas
(Two Servings)
Ingredients:
4 tsp Sugar
8 Jalapeño slices, 1/8"
8 Cucumber slices, 1/8", seeds removed
3 oz. Tequila
1 oz. Orange Liqueur
Juice of 1 lime
Muddle the sugar, jalapeños and cucumbers together really well, until the sugar dissolves. I like to do this in a small mason jar.
Add the tequila, orange liqueur and the lime juice.
Put the lid on the jar and give it a good shake.
Fill up two glasses with lot and lots of ice and pour the Jalapeño Cucumber Margaritas over top.
If you prefer a spicier margarita, just let the jar chill in the refrigerator. The longer it chills, the spicier it will be.
I promise you - you will just love this margarita!! Wishing everyone a wonderful weekend! Happy Friday!
