My "Friday Night Cocktails" have turned into "Friday Night Lights" for football season this fall and I am loving it. So last night, I enjoyed my "Saturday Night Cocktail" with my girlfriends at our favorite local Mexican restaurant.
Have you ever had a Jalapeño Cucumber Margarita? It is one of my favorites and this restaurant is known for them. The spicy jalapeños and the cool cucumbers mellow together perfectly in the lime tequila! It's a perfect cocktail for a night with good friends! Here's how I make them at home...
Jalapeño Cucumber Margaritas
(Makes 2 cocktails)
Ingredients: 4 tsp Sugar 8 Jalapeño slices, 1/8" 8 Cucumber slices, 1/8", seeds removed 3 oz. Tequila
1oz. Orange Liqueur
Juice of 1 lime
Muddle the sugar, jalapeños and cucumbers together really well, until the sugar dissolves. I like to do this in a small mason jar.
Add the tequila, orange liqueur and the lime juice.
Put the lid on the jar and give it a good shake.
Fill up two glasses with lot and lots of ice and pour the Jalapeño Cucumber Margaritas over top.
If you prefer a spicier margarita, just let the jar chill in the refrigerator. The longer it chills, the spicier it will be.
My "Friday Night Cocktails" have been replaced with "Friday Night Lights"...
