I love the holidays and this time of the year so much! I love all of the traditions and foods. It all just makes me so happy! The one thing that I do not like, however, is making mashed potatoes on Thanksgiving. Why steam up the kitchen with boiling water when you can prepare them the day before with this easy recipe! It is the best! And a game changer.
On Thanksgiving day, while the turkey is resting, I just pop these potatoes in the oven to warm up and voila - it is the easiest Thanksgiving dinner ever! Trust me, these are the creamiest and most delicious mashed potatoes! You will want to make them ahead like this every time!!
Make Ahead "Holiday" Mashed Potatoes
Ingredients:
2 1/2 lbs. golden potatoes, peeled and diced (approximately 6 to 7 potatoes)
4 tbsp butter, sliced
3 tbsp milk
1/2 cup sour cream
3 oz. cream cheese, diced
Salt and pepper to taste
Add diced potatoes and to a large pot, filled with water.
Put on stovetop and let water come to a boil and cook for 15-20 minutes, until fork tender.
Drain the potatoes and add to a mixer.
Add butter, cream cheese and milk and mix with mixer.
Scrape down the sides and season with salt and pepper.
Add the sour cream and mix again, until smooth and fluffy. You don't want to over beat it or it will turn pasty.
Spray a casserole dish with cooking spray.
Spoon the mashed potatoes into the casserole dish and spread it out into a single layer.
Cover and refrigerate until you are ready to bake.
When you would like to bake the mashed potatoes for dinner, take the cover off and dot with a few pats of butter.
Bake at 350 degrees for 35 to 45 minutes, until they are bubbly and golden.

These potatoes also freeze great too! Just be sure to add a little extra milk if you would like to freeze them.
Isn't this so much easier than making steamy mashed potatoes on the actual holiday?! I love to prep as many foods as I can the day or two before. So then I can truly enjoy the actual holiday with my family!
