Mango Salsa

This has always been one of my favorites! Just tastes like summer and is perfect for the upcoming Cinco De Mayo! So delicious with tortilla chips, on top grilled shrimp/chicken/fish, in a fresh salad or as a taco topping!


1 mango, skin removed and diced

1 cup grape tomatoes, diced

2-3 green onions, diced

Juice of one lime

1 garlic clove, super finely minced

Chopped cilantro to taste (2-3 tbsp)

Salt to taste


Combine all ingredients in a bowl. We love cilantro but if you don't, just leave it out. Enjoy!!
