Peach Prosecco Bellini

The peaches have been amazing this year! And they are inspiring me for lots of fresh peach recipes in the kitchen.


It is Friday night and you know what that means...it is time for a special Friday night cocktail, made with super ripe and sweet peaches. I love this Peach Prosecco Bellini! Fresh peaches are such a refreshing addition to chilled, sparkling Prosecco! Cheers!


Peach Prosecco Bellini

Ingredients:

2 ripe peaches, diced

Prosecco, chilled

Optional: 1/4 cup simple syrup


  1. Puree the peaches in a blender. Please note that you can also use frozen peaches as well. If you prefer a sweeter Bellini, add simple syrup (please find recipe below).

  2. Transfer the peach puree to a jar or container and chill in the refrigerator.

  3. When it is cocktail time, add 2 tablespoons of the peach puree to a champagne flute.

  4. Fill the rest of the flute up with chilled Prosecco and stir to combine the peach puree with the Prosecco.

Cheers! This has been an exhausting first week back to "virtual school" from home so this fresh, sparkling cocktail was just what I needed! We made it through week one! I hope that everyone has a wonderful weekend!
