There is one cookie that totally brings me back to my childhood - my mom's Peanut Butter Cookies. She has the best recipe for them! They are the chewiest peanut butter cookies ever! Match it with the crunch of the peanuts and a tall glass of milk and and I am in heaven!
1 1/2 cups flour
1/2 tsp baking soda
1 stick of butter, softened
3/4 cup sugar
1/4 cup brown sugar
1/2 tsp salt
1 1/4 cup crunchy peanut butter
1 egg
1 tsp vanilla extract
Sift the flour, baking soda and salt together and set aside.
In a mixer, beat together the butter, sugar and brown sugar.
Add the egg, vanilla and crunchy peanut butter and mix.
Slowly beat in the flour mixture until it is combined.
Cover the dough with plastic wrap and refrigerate for 2 to 12 hours.
When you are ready to bake the cookies, preheat the oven to 350 degrees.
Arrange the dough in balls on the cookies sheet with space in between. I use a small scooper for this.
Dip a fork in flour and press an "x" into the cookie dough ball, flattening them out.
Bake for about 10 minutes, until golden.
Makes approximately 30 cookies.
