My family could truly eat Mexican food every night! We just crave it! Sometimes it is fun to take a break from a traditional dinner. I decided surprise the boys and make these Pepper Nachos for dinner! They were so excited! And I love how healthy it is! Pepper Nachos are perfect if you are watching your carbs. And it is the best appetizer to take to a party! Everyone will love them! I know that I enjoyed having some guilt-free nachos! Yum!
Pepper Nachos
Ingredients:
Mini bell peppers
4 oz. cream cheese, softened
2 tsp. taco seasoning
Can of refried beans
Chunky salsa
Cheddar cheese, shredded
Jalapeños, sliced thin (optional)
Slice the peppers in half and scoop out the seeds.
Place the peppers face up on a sheet pan. I like to line it with foil or parchment paper to make cleanup a breeze.
Mix together the cream cheese and the taco seasoning in a bowl.
Add a thin layer of the cream cheese mixture onto the pepper halves.
Next add a layer of refried beans.
Add a small dollop of salsa on top of the beans. Make sure that you are using a good chunky salsa.
Add a layer of shredded cheese on top of the pepper halves.
Top with the jalapeño slices if you like spicy foods like we do. If you prefer less heat, just finely dice up some mini bell peppers to add some extra color.
Bake at 375 degrees for 25 to 28 minutes, until bubbly and golden.
