Happy Friday, friends! It is Friday night and time for a refreshing cocktail! A Pimm's Cup is a perfect one for this hot summer day!

I first discovered this cocktail while vacationing in Williamsburg, Virginia. It was such a hot day and we did a ton of walking, while exploring the town. We decided to have dinner at an old tavern for a special treat. I ordered this cocktail to cool off and have been loving it ever since.

In England, they serve a Pimm's Cup at Wimbledon just as we serve Mint Juleps at the Kentucky Derby. Pimm's No. 1 is a gin based liqueur that tastes like fruit and spices. Adding the mint, lemon, lime, strawberries, cucumber and ginger ale to it makes it such a light and refreshing summer cocktail! You will love it!

Pimm's Cup

Ingredients:

Ice

2 oz. Pimm's No. 1 Liqueur

Dash of sour mix (optional)

3 oz. ginger ale or lemon lime soda

6 mint leaves

2 or 3 thin slices of cucumber

1 strawberry, sliced thinly

1 half lemon slice

1 half orange slice

  1. Fill the glass with ice and add the cucumber, fruit and mint.

  2. Pour in the Pimm's No. 1 Liqueur and soda. I prefer the taste of ginger ale with this to make it less sweet.

  3. Give this cocktail a good stir and serve with a straw.

My favorite part is eating the Pimm's soaked fruit and cucumber after the cocktail is finished. So yummy and refreshing! Cheers to you all for a wonderful weekend!
