One dessert that I love to make more than anything are old fashioned icebox cakes! With just cookies and cream, they are a perfect, easy, no bake dessert! And they always turn out so elegant! A beautiful dessert for even the fanciest of dinners!
This Pumpkin Spice Icebox Cake takes just minutes to put together and the flavors are amazing! Who doesn't love a delicious pumpkin spice dessert during the fall season?! This is a perfect special dessert to make for Halloween evening and it is elegant enough to serve for Thanksgiving dinner! Everyone will love it and only you will know just how easy it was to make. That is the best kind of dessert!
Pumpkin Spice Icebox Cake
Ingredients:
2 cups heavy whipping cream
8 oz. cream cheese, softened to room temperature
1 tsp vanilla extract
3/4 cup powdered sugar
1/4 cup pumpkin spice liqueur
1 tsp pumpkin spice blend
2 1/2 sleeves of ginger snap cookies (approximately 60 cookies)
Springform pan
Add the softened cream cheese to a mixer and mix until creamy. Scrape down the sides.
Add the whipping cream, vanilla, powdered sugar, pumpkin spice and pumpkin spice liqueur to the mixing bowl with the cream cheese.
Mix until soft peaks form and it is just like whipped cream. Divide the pumpkin spice cream mixture into 4.
Add one layer of ginger snaps to the bottom of the springform pan. Break cookies up if you need to to fill in the spaces. Don't worry...it doesn't have to be perfect.
Add 1/4 of the whipped pumpkin cream to the springform and spread it out so that the first layer is completely covered.
Repeat these steps 3 more times so that you have a total for four layers of cookies and pumpkin cream.
After the 4th layer, cover the springform pan with plastic wrap and refrigerate for at least 10 hours. Or even overnight.
When you are ready to serve, take the cake out of the fridge and take the plastic wrap off. If you would like, you can add some chocolate sprinkles.
Take a knife and run it along the outside of the springform pan to release the cake from the sides.
Release the springform pan carefully and place the bottom onto your serving tray.
Serve cold, cut into slices and enjoy!
