Reminiscing about our trip to Nova Scotia...

This is such a different type of summer for all of us. Isn't it? We usually spend our summers taking long road trips. Since we are unable to this summer, I have been reminiscing about our road trips from the past that have been inspiring me in the kitchen.


I am thinking back to two summers ago. From Prince Edward Island, we took a ferry to Nova Scotia and headed north to Cape Breton Highlands National Park. This is a part of the world that I had always wanted to see. This area is know for its famous road, The Cabot Trail. This is the most beautiful road that I have ever been on. I now notice it in a lot on car commercials. The Cabot Trail hugs the seaside and mountains and takes you through several quaint seaside villages. We didn't get to see any moose but we did get to hike the well known Skyline Trail. Those views were like no other! You could see forever!


I can now see why Nova Scotia means "New Scotland". Its terrain is so beautiful and there is even Scottish music on the only radio station that we could tune into. You even see people just playing their bagpipes on their porches. I hope to get back to Cape Breton again someday. It is not easy to get to but it sure is worth it!

I really hope to make it back to beautiful Cape Breton Highlands National Park again! It has inspired me for dinner tonight!
