Happy first day of summer! And boy does it feel like summer today! It is a hot and steamy day in Pennsylvania and I want a super quick and easy dinner tonight so that I don't steam up the house. It is a perfect night for Shrimp Scampi! I always keep shrimp in my freezer for this quick and easy meal that literally takes minutes to throw together! It cooks as the pasta is boiling! Easy as can be!
1 1/2 lbs shrimp, shelled and deveined
3 tbsp butter
1 tbsp olive oil
3-4 cloves of garlic, minced
2 green onions, chopped with green and white parts separated
1 cup white wine
Juice and zest of 1 lemon
1/2 tsp kosher salt
1/2 tsp pepper
Optional: red pepper flakes to taste
1/2 cup parsley, chopped
16 oz. pasta, cooked according to directions
Fresh Parmesan cheese
Melt 2 tbsp butter in a skillet over medium high heat.
Add the oil, the white ends of thegreen onions and garlic and sauté for one minute.
Add the lemon juice and wine. Let it cook a few minutes to reduce the wine.
Next add the shrimp, green ends of the onions, salt, pepper and lemon zest. If you like a little heat, add some red pepper flakes too.
Stir until the shrimp turns that pretty orange color and finish the sauce by stirring in 1 tbsp butter until it melts. Be careful not to overcook the shrimp.
Remove from heat and toss in the cooked pasta.
Top the pasta with the parsley and fresh Parmesan cheese.
Enjoy! Be sure that you make some garlic bread because it tastes so delicious when it is dipped into this delicious and garlicky Shrimp Scampi sauce!
