It was one of those crazy days. I knew that I was going to be out all day and we had another busy night of sports, with everyone eating dinner at different times. It is a perfect night for Slow Cooker Chili!

When I cook ground beef, I always cook several pounds at one time. Then I freeze the cooked ground beef in 1 pound ziploc bags. Doing this makes throwing together dinner in the crock pot a breeze. It is a cold and rainy day, so I loaded up my slow cooker with all of the ingredients for chili and put the frozen, cooked ground beef on top to make the easiest dinner ever! Chili is a perfect dinner to warm up on a night like this!

Slow Cooker Chili

Ingredients: 1 lb cooked ground beef (I used cooked and frozen ground beef from my freezer) 1 onion, diced 2 cloves garlic, minced 14.5 oz. can diced tomatoes 15.5 oz. can kidney beans (do not drain or rinse) 1 to 1 1/2 tsp of salt 3/4 tsp pepper 1 tbsp chili powder 1 tsp paprika 1 tsp cumin Fritos Cheddar cheese, shredded Sour cream Optional: diced green onions and cilantro

  1. Add the diced tomatoes, kidney beans, onions and garlic to your slow cooker.

  2. Add the salt, pepper, chili powder, paprika and cumin to the tomatoes and beans and stir.

  3. Place the frozen, cooked ground beef on top and place the lid on the slow cooker.

  4. Cook on low for 6 to 8 hours.

  5. Take the lid off and break up the ground beef.

  6. Stir to combine it well and serve with your favorite chili toppings.

I am so glad that I was able to throw this easy dinner into the slow cooker this morning and have it cook itself all day! It is a perfect dinner for this busy fall day! We love to serve our chili on a bed of Fritos. What do you eat with your chili?
