Slow Cooker Chipotle Chili

We have not had a big snow in years! The snow has started to fall and I pray that we get the 10 to 15 inches that they are calling for! I have the perfect dinner to warm us up on this cold and snowy night...Chipotle Chili.


My family loves spicy foods and they love chili! The chipotle peppers in adobo sauce add the perfect smoky flavor and spice to my traditional chili recipe. It really kicks it up a notch. I love how the flavors come together as they simmer away in the crock pot. We love to serve this Chipotle Chili on top of Fritos and top it with sour cream, cheddar cheese and green onions. So delicious! If you love spicy chili, you will love this!


Slow Cooker Chipotle Chili

Ingredients:

1 lb ground beef

1 onion, diced

2 cloves garlic, minced

14.5 oz. can diced tomatoes

15.5 oz. can black beans (do not drain or rinse)

1/4 to 1/2 (7 oz.) can of chipotle peppers in adobo sauce, minced (depending on how much spice you prefer)

1 to 1 1/2 tsp of kosher salt

3/4 tsp pepper

1 tbsp chili powder

1 tsp paprika

1 tsp cumin

Fritos

Cheddar cheese, shredded

Sour cream

Optional: diced green onions and cilantro


  1. Cook the ground beef and onion in a skillet, over medium high heat, until cooked through.

  2. Drain the fat. Add the garlic and cook for 1 minute.

  3. Add the diced tomatoes, black beans and chipotle peppers to your slow cooker.

  4. Add the salt, pepper, chili powder, cumin and paprika to the slow cooker and stir until it is combined well.

  5. Add the cooked ground beef mixture to the slow cooker and stir until it is combined.

  6. Put the lid on your slow cooker and cook on low for 4 to 8 hours.

  7. When you are ready to serve, place some Fritos in a bowl. Pour a scoop of chipotle chili on top. Add sour cream, cheddar cheese and green onions to the top.


Enjoy this spicy and delicious chili hot!


Note: Do not let the extra chipotle peppers to to waste. Instead, place them in a Ziploc bag and freeze for your next batch of chili.









Please note that you can also make this on the stovetop and let it simmer! I love the flavors of this Chipotle Chili! And the best part is making chili cheese dogs with the leftovers. Perfect for cold and snowy weather!
