Slow Cooker Chicken Fiesta Soup

Today is the first day of October - which means that it is officially soup season! My favorite! I love any kind of soup that I can just mix up in a slow cooker and let it cook all day! It makes dinner a breeze!


Today I am making Chicken Fiesta Soup in my slow cooker. I call it that because of its chicken taco flavor and it makes enough to feed a party! This recipe makes 4 quarts and it is the perfect, easy meal to feed a crowd. Just put it on your kitchen island with all of your favorite taco toppings next to it. I love to top this soup with cheese, crushed tortilla chips, jalapeños, avocado, sour cream and green onions. Everyone always loves this soup. It is so easy, inexpensive and incredibly healthy too!

Slow Cooker Chicken Fiesta Soup

(Makes approximately 4 quarts)


Ingredients:

3 chicken breasts

1 (14.5 oz.) can of petite diced tomatoes

1 (15.25 oz.) can of corn, drained

1 (7 oz.) can of diced green chili peppers

1 (15.5 oz.) can black beans, drained and rinsed

1 cup salsa verde

1 medium onion, finely diced (1 cup)

8 cups chicken stock

Salt and pepper to taste

1 1/2 tsp oregano

1 1/2 tsp cumin

1/4 to 1/2 tsp cayenne pepper (depending on how spicy you want it)

1/2 tsp garlic powder

1/2 tsp paprika

1/2 chili powder


  1. Add the diced tomatoes, corn, green chili peppers, black beans and salsa verde to your slow cooker pot.

  2. Next, add all of your seasonings and stir.

  3. Place the chicken breasts on top and pour the chicken stock in.

  4. Cover and cook on the low setting for 7 to 8 hours or on the high setting for 4 hours. Until the chicken is fully cooked and shreds easily.

  5. Remove the cooked chicken from the pot and shred the chicken, using two forks.

  6. Add the shredded chicken back to your slow cooker and stir.


Enjoy with all of your favorite taco toppings on top...crushed tortilla chips, cheese, avocado, jalapeños, sour cream and green onions.
